Green Coffee Rating

Green coffee classification: Brazil Method / New York

The grain classification standard for green coffee provided by the SCAA is an excellent method of comparison. It is superior to certain systems which favors the relationship between defective coffee beans and the quality of the beverage. However, leaves out some of the important defects that can occur in coffee (See Brazil's method of classification of green coffee beans).

Coffee Classification system SCAA

Three hundred grams of adequately stripped coffee beans to be sorted using screens of 14, 15, 16, 17 and 18. The remaining coffee beans in each screen are weighed and the percentage is recorded. Once the rating of 300 grams of coffee is very time consuming, it is customary to use 100 grams of coffee. If you are dealing with a high quality coffee with just a few faults, use 300 grams. If the coffee is of lower quality with many defects 100 grams, it is often sufficient for a correct classification to any degree below the Standard Grade or Off. The coffee then be roasted to evaluate glass characteristics.

Specialty Coffees (1): Special Green grains have no more than 5 full defects in 300 grams of coffee. Primary defects are not allowed. A maximum of 5% above or below the indicated size of the screen is tolerated. Specialty coffee must possess at least one distinctive attribute in the body, flavor, acidity, aroma, or must be free of defects and impurities. Quakers are not allowed. Moisture content is between 9-13%.
Premium cafes (2): premium coffee should be no longer than eight full defects in 300 grams. Primary defects are permitted. A maximum of 5% above or below the indicated size of the screen is tolerated. You must have at least one distinctive attribute in the body, flavor, acidity, aroma, or must be free of faults and may contain only 3 quakers. Moisture content is between 9-13%.
Coffee exchange Grau (3): degree of Coffee Exchange should not take more than 9-23 full defects in 300 grams. It should be 50% by weight of the above screen size 15 with not more than 5% of the screen size below 14. Cup failures are not allowed and a maximum of 5 Quaker allowed. Moisture content is between 9-13%.
